LOW-ALLERGENIZED ROYAL JELLY AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a low-allergenized royal jelly capable of easily reducing allergic property while suppressing reduction of useful physiological activities of the royal jelly and to provide a method for producing the same.SOLUTION: This low-allergenized royal jelly comprises active components such as 10-hydroxy decenoic acid, together with a peptide component originating from the royal jelly having 4.5 kDa of molecular weight. The low-allergenized royal jelly is effectively produced by subjecting royal jelly to a protease treatment and a glycolytic enzyme treatment using -mannosidases. The protease treatment preferably comprises a first decomposing process subjecting a diluted royal jelly solution with adjusted pH at 6.5-8.0 to an endo type neutral protease treatment, a pH adjusting process adjusting the pH of the royal jelly diluted solution after the first decomposing process at 6.5-8.0 and a second decomposing process subjecting the diluted royal jelly solution after adjusting pH to an endo type neutral protease treatment.COPYRIGHT: (C)2006,JPO&NCIPI
