The manufacturing method of noodles using organic red ginseng according to the present invention involves adding active ingredients of red ginseng to the noodles, and comprises the steps of washing the red ginseng; inputting the red ginseng into a cutter to cut into sizes of 1-3 cm; inputting the red ginseng into a hydraulic compressor to compress and extract red ginseng extract while separating the residues; uniformly mixing 74-77 weight% of wheat flour, 3-5 weight% of salt, 1-2 weight% of cooking oil and 18-20 weight% of red ginseng extract in a kneading apparatus to make the dough; using a roller three to five times to pressure-mold the dough into 0.1-0.3 cm thickness; inputting the pressure-molded dough into a noodle machine to extrusion-mold the dough into a noodle form; and drying the noodles. The manufacturing method of said noodles according to the present invention has an effect of easily providing consumers with the saponin component beneficial to the human body, at an economic cost.
