Disclosed is method for the identification of a tender meat. The method involves the quantification of the expression level of a DNAJA1 gene in a muscle sample and matching said expression level of the sample to that of a control gene wherein the lower expression level of the DNAJA 1 gene of the muscle sample with regard to that of the expression level of the control gene is an indication of the tenderness of the meat.
