The present invention refers to the treatment of agave vinasse in the designations of origin of distilled beverages by the elaboration of agave vinegar as an alternative of legal compliance for use and final disposal of this waste, complying with the regulations in force for final disposal treatment and consumption as food according to the respective sanitary and nutritional norms. As a result, we will have a novel product; the environmental impact will be reduced in diverse bodies of water, smells and diverse environmental contamination in the entities where there is the production of distilled agave beverages of different varieties.
