The present invention relates to a biotechnological process for the preparation of a dietary supplement for controlling body weight and blood levels of glucose, cholesterol and triglycerides in obese and non-obese individuals, by an alcoholic- acetic fermentation using apple pieces and pineapple peel, from a honey- and unrefined sucrose-containing sweet substrate with the addition of a fermentation inoculum (mother vinegar), the fermentation process being stopped at an acidity level of 0.5% - 2.0% (expressed in g/L acetic acid), preferably 0.8%. The process comprises the steps of preparing the raw material, adding the raw material, undergoing an alcoholic- acetic fermentation, measuring acidity and stopping the fermentation process, recycling the inoculum, filtering and homogenizing and pasteurizing.
