The invention discloses a picking and baking method for reducing hanging ash of upper leaves of flue-cured tobacco. The picking and baking method comprises the following steps: after the tobacco leaves are topped, 2-3 axillary buds in growing axillary buds are retained, and then, after the upper leaves are mature, one-time harvesting for baking is performed, which specifically refers to the top 4-6 leaves are picked at one time after top two leaves are fully ripe; the adopted optimized baking technology of upper tobacco mainly comprises a yellowing stage, a color fixing stage and a stem drying stage; and the developed baking method and technology are especially suitable for hanging ash phenomenon of upper tobacco leaves resulted from enzymatic browning reaction generated due to too high nutrient contents of polyphenol and polyphenol oxidase resulted from the too thick upper tobacco leaves, too much accumulated dry matters, a high content of bound water and a rich nutrient content of the upper tobacco leaves.-The method of the invention is simple and easy to operate, the conditions that the upper tobacco leaves having the excess nutrition are easy to hang ash can be reduced, -losses are reduced, and incomes of tobacco farmers are increased.
