The invention discloses a flue-cured tobacco management method and a flue-cured tobacco baking method for alleviating cold-injury tobaccos by adoption of betaine. The method comprises the following steps: 1) prevention of cold injury tobaccos: preventing the cold injury tobaccos by spraying a betaine solution to tobacco plants that do not suffer cold injury according to the weather condition; 2) grade appraisal of cold-injury tobaccos and one-time spraying: appraising grades of tobacco plants that suffer cold injury, dividing the degree of diseases of the cold injury tobaccos into three grades; and spraying the betaine solution once according to the grades of the cold-injury tobaccos; 3) secondary grade appraisal of cold-injury tobaccos and secondary spraying: appraising the grades of coldinjury tobaccos again for plants that are sprayed for 10-20 days, secondarily spraying the betaine solution according to the grade of cold injury tobaccos till the grades of cold injury tobaccos arenot above 1 grade. According to appraisal of different injury grades of the cold injury tobaccos, the betaine solution at the proper concentration is sprayed in order to alleviate the injury degree. As a result, the cold injury tobaccos in the field do not appear due to factors such as sudden drop in ambient air temperature, excessively low temperature, excessively high soil humidity, and excessively low soil temperature.
