MULTIFUNCTIONAL COMPOSITION AND PROCESS FOR PREPARING IT FROM WINE YEAST

The invention relates to a process for preparing a multifunctional composition from wine yeast. The process, as claimed by the invention, consists of the following steps: dilution with water of the wine yeast recovered from the vinification process, enzymatic hydrolysis of the wine yeast with a mixture of enzymes containing beta-glucanases and proteases, separation of cell residues by centrifugation, cooling to room temperature and the addition of sucrose stearate to concentrations of 0.71 to 1.24%, ultrasonic homogenization, tangential ultrafiltration of the supernatant, concentration of retentate and freeze-drying, resulting in a flavouring composition with antioxidant, antimicrobial and antihypertensive activity.
