TOMATO JUICE PRODUCTION METHOD

FIELD: food industry.
SUBSTANCE: invention is related to tomato juice production methods and may be used in preservation industry. The method is as follows: after crushing and fresh tomato seeds removal red tomatoes are centrifuged for juice production, the remaining tomato mass is heated up to 60°C and strained; the produced pulp is used in production of concentrated tomato products.
EFFECT: invention allows to reduce wastes quantity in tomato juice production, obtain tomato seeds in fresh form so that they can be used as a planting material, regulate pulp quantity in the ready tomato juice and ensure the ready product quality enhancement.
