The invention discloses a tomato flesh fruit jelly and a preparation process thereof, wherein the tomato flesh fruit jelly comprises, by mass, 20-40% of tomato flesh, 15-20% of sucrose, 0.5-1.0% of carrageenan, 0.5-1.0% of konjac powder, 0.1-0.2% of citric acid, 0.03-0.05% of sorbic acid, 0.10-0.15% of essence, and the balance of distilled water. According to the present invention, with the preparation process, the tomato flesh is retained, the tomato flesh is not further treated so as to retain the nutrients of tomato to the maximal degree and provide the sour and sweet taste and the beautiful appearance for the fruit jelly; the production process comprises washing, selecting, peeling, auxiliary material adding, packaging and other steps so as to retain the nutrients of the tomato flesh to the maximal degree; and the tomato flesh fruit jelly has the delicious taste, is rich in VC, and has effects of anti-oxidation, anti-aging, skin protection, and the like.
