PRODUCTION OF TOMATO PIGMENT EMULSION

PROBLEM TO BE SOLVED: To obtain a tomato pigment emulsion improved in tone of color, excellent in water dispersibility when used as a colorant and not causing precipitation and separation by physically all emulsifying a specific aqueous tomato pigment suspension and then by adding/mixing a emulsion stabilizer. SOLUTION: The objective pigment is obtained by centrifuging (A) a processed tomato product such as a smashed tomato product, a ground tomato product or a pulper-processed tomato product to collect (B) liquid portion, by the precise filtration of the portion B to collect (C) impermeable matter and, if necessary, by adding (D) water to the matter C to obtain (E) an aqueous tomato pigment suspension, by physically emulsifying the suspension E and then by adding/mixing (F) a emulsion stabilizer such as a protein-based emulsion stabilizer or a cellulose-based emulsion stabilizer. The average pore size of the membrane used in the precise filtration preferably is 0.1-0.5 m. The physical emulsification treatment is carried out e.g. using a high frequency pressure swing-type emulsifier, a fixed mixer or a homogenizing emulsifier.COPYRIGHT: (C)2000,JPO
