PROBLEM TO BE SOLVED: To provide processed tomato such as condensed tomato having fruitiness, which processed tomato is required by consumers from the viewpoint of aroma component-approach or process-approach.SOLUTION: The processed tomato contains a component (A) of 6-methyl-5-heptene-2-one, a component (B) of 2-isobutylthiazole, and a component (C) of at least one of furfural, dimethyl sulfide, dimethyl disulfide and dimethyl trisulfide, at rates of 100 component (A), 3-50 component (B) and 20-200 component (C), based on an integral area ratio of a chart output the measured results when measuring the volatile components by solid phase microextraction-gas chromatograph mass spectrometry. The processed tomato is produced by moist heat treatment of raw whole tomato or rough-cut raw tomato at 70-120C, crushing, and condensation treatment at 35-85C and reduced pressure so that the Brix is in a range of 9-21%.COPYRIGHT: (C)2011,JPO&INPIT
