The invention relates to a production method of tomato juice. By carrying out heat treatment and then cold shock treatment, tomato is cracked; then, tomato pulp is prepared; and after filtration for impurity removal, a tomato juice is prepared. The produced tomato juice has small fiber grains, and rich nutrients in the tomato juice are easy to absorb by human body. The production technology of the tomato juice comprises a cooling process. Thus, damage of high temperature during the production process to nutrients in the tomato juice and loss of nutrient elements can be reduced, and nutrition and health-care functions of the tomato juice beverage are enhanced.
