The invention relates to a comprehensive utilization method of tomato sauce residue. According to the method, an alkali process or a combination of an acid process and an enzyme process for processing the tomato sauce residue are employed for dissolving and extracting of tomato polysaccharide, and are respectively combined with a hydrothermal method, and thus the comprehensive utilization method of tomato sauce residue is formed. The comprehensive utilization method of tomato sauce residue has a higher tomato polysaccharide extraction rate; and the tomato-polysaccharide-extracted residue can be employed as a culture medium for strain solid culturing and used for producing high-added-value products.
