The present invention provides a method for processing high sugar content food using a high voltage pulsed electric field (PEF) and high sugar content food processed by the same method, wherein the method can improve the workability in injecting a stevia component into tomato using a high voltage PEF, generate uniform sweetness on the whole uniformly by injecting the stevia component into the tomato on the whole, in particular, and maintain marketability as it is by preventing damage or bursting of tomato during the process of injecting the stevia component into the tomato. The method for processing high sugar content food using PEF according to the present invention comprises the steps of: inputting tomato in a chamber in which a stevia liquid is stored in a state in which the tomato is immerged in the stevia liquid and applying the high voltage PEF to the tomato to perform electro-permeabilization and electroporation for cell walls and cell membranes of the tomato such that the stevia component is infiltrated and injected into the tomato; and taking the tomato, into which the stevia component is injected, out of the chamber and drying the tomato, thereby obtaining the high sugar content food through the processing method.
