The invention particularly relates to vermicelli and a preparation method thereof. The vermicelli is prepared from the following raw materials in parts by weight, 45-50 kg of starch, 40-50 eggs, 2-3 kg of vegetable juice, 2-3 kg of fructus lycii juice, 1-1.2 kg of olive oil, 0.5-1 kg of edible salt and 0.2-0.3 kg of alum water. The vermicelli is rich in nutrition and good in taste.
