The invention discloses a process for treating salted egg yolk to increase oil and sand. The process comprises the following steps: preparing mildew-proof gel in a process of treating eggs, condensingcarboxyl on carbon nanotubes with amino on gelatin molecules and amino on dopamine molecules to prepare composite gelatin, and reacting sodium carbonate with acetic acid to prepare sodium diacetate,simultaneously reacting with fumaric acid with methanol to obtain methyl fumarate, then ultrasonically treating methyl fumarate and sodium diacetate, further adding cinnamaldehyde, citric acid, and olive oil, and fully stirring to prepare the mildew-proof gel. When poultry eggs are immersed in the mildew-proof gel, polydopamine layer on surfaces of the mildew-proof gel particles forms a chemical bond with active groups on surfaces of the eggshells, and then forms a mildew-proof film on the surfaces of the eggshells, when mold comes into contact with the poultry eggs, the cells will die, thereby killing the mold, and it is ensured that no mold will appear during preparation of salted eggs.
