The invention provides a preparation method of an olive oil analysis experiment sample, and belongs to the technical field of vegetable oil processing. The preparation method of the olive oil analysisexperiment sample provided by the invention comprises the following steps: crushing olive fruits to obtain jam; fusing the crushed jam in a sealed environment for 55-65 min at a fusion temperature of26-28 DEG C and a fusion rotating speed of 45-55 rpm; centrifuging the mixed jam to obtain an oil-water mixed solution; and naturally settling the obtained oil-water mixed solution to layer oil and water, and sucking an oil layer after the oil and the water are layered to obtain the olive oil analysis experiment sample. According to the preparation method of the olive oil analysis experiment sample, few olive samples are needed, and the obtained olive oil has good representativeness, effectiveness and integrity.
