The invention discloses a nutritional and healthy edible oil formula and a preparation method thereof. The edible oil formula comprises the following raw materials in percentage by weight: 10-20% of peanut oil, 5-10% of linseed oil, 35-40% of olive oil, 15-25% of corn oil, 5-10% of rapeseed oil, 1-2% of fat-soluble vitamins, 0.5-1% of astaxanthin, 3-8% of tea oil and 4-6% of spices. According to the edible oil formula, ratio of the olive oil in vegetable oil is increased, the olive oil is rich in monounsaturated fatty acid, in addition to providing heat to a human body, the olive oil can further adjust ratio of high-density lipoprotein cholesterol to low-density lipoprotein cholesterol in human plasma, increase level of high-density lipoprotein (HDL) in the human body and reduce level of low-density lipoprotein (LDL), thereby preventing excessive cholesterol in the human body; The peanut oil, the linseed oil, the corn oil and the rapeseed oil are proportionally prepared, so that composition proportions of saturated fatty acid, monounsaturated fatty acid and polysaturated fatty acid contained in the edible oil formula are relatively balanced.
