PROCESS FOR PREPARING POLYPHENOL-ENRICHED HONEY AND COMPOSITION PREPARED THEREBY

The invention relates to a process for preparing honey enriched with polyphenols from vegetable matter and to a composition prepared by said process. According to the invention, the process has the following stages: wet grinding of vegetable matter and mixing thereof with water, addition of an enzyme mix consisting of hydrolases acting upon the polysaccharides in the cellular wall and feruloyl-esterases, followed by enzymatically assisted extraction of vegetable matter in water, continuous tangential ultrafiltration of the vegetable matter - water - enzyme mixture, starting from the second hour, with retentate return to the enzymatically-assisted extraction mass, liquid-liquid counter-flow extraction, on membrane contactor, of the extracted permeate, re-extraction of vegetable oil in which the polyphenols were subjected to liquid-liquid counter-flow extraction, on membrane contactor, in respect of the honey which is intended to be enriched in polyphenols, recovery of the polyphenol-enriched honey, recovery of the vegetable oil to be recycled in a new extraction cycle and sending the extracted vegetable material to be composted. The claimed composition has a polyphenol content of at least 600 mg gallic acid equivalent / kg of honey and an antioxidant activity TEAC of quenching the anion radical ABTS, 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulphonate), of at least 300 μ mole trolox equivalent/ 100 g of honey.
