The invention discloses a method of making health ecological honey wine, and finished honey wine is made by: filtering selected liquefied honey, uniformly mixing with purified water to obtain honey-water slurry, adding sodium metabisulfite and yeast emulsion, performing alcohol fermentation, filtering and sealing for aging; bee pollen nutrient solution is obtained by: mixing bee pollen, red dates, Ganoderma powder and purified water, soaking, steaming, blending in red yeast rice, and fermenting; the honey wine is made by fermenting the bee pollen nutrient solution, high-quality honey and purified water. The method may be used in the industrial production and is mature and stable, and the honey wine is a natural nutrient health specialty.
